Nicoise Salad

Ingredients

Dressing:
1 Garlic Clove, minced
2 Tablespoons Dijon Mustard
Juice of 1 Lemon
¼ cup Red Wine Vinegar
¾ cup Olive Oil
Fresh Oregano
Salt and Fresh Ground Black Pepper

Salad:
Chopped Romaine
Diced Red Onions
Cucumbers, cut in half-moons
Anchovies
Water Packed Albacore Tuna, flaked
Cherry Tomatoes, cut in half
Olives
Capers
Hard-boiled Eggs, quartered

Preperation

  1. To make the dressing, whisk together the garlic, Dijon, lemon juice and red wine vinegar until well-mixed. Slowly whisk in the olive oil until the dressing is emulsified. Season to taste with salt, pepper and fresh oregano.
